Chocolate Wine Trail

We paired our delightful Traminette with Coffee Cinnamon Cremet Tiramisu with Chocolate Sauce; served with chocolate dipped ginger and spiced apple cider cookies. Yum !  The event was a huge success so we thought we would share our recipe with you. Enjoy!

Coffee Cinnamon Cremet Tiramisu with Dark Chocolate Sauce

9 oz cream cheese

1 cup heavy whipping cream

4 tablespoons strong coffee of your choice

1/3 cup ultrafine baker's sugar

Chocolate Sauce:

3 1/3 oz dark chocolate

1 3/3 oz unsalted butter

Beat the softened cream cheese a little until smooth and add the heavy cream, mixing slowly while adding the coffee and suagr until a slightly fluffy yet solid texture.

Place the creamy fluffy mixture in the refrigerator for 1 1/2 hrs., then take an ice cream scoop with a moveable scaper and scoop out the Cremet mixture flattening the one side so as you place it on a dessert plate you have a flat side and a nicely shaped dome from the scoop.

Drizzle your dark chocolate sauce over your Cremet dome and plate  and garnish with a Ginger spice cookie ( my version for the Tiramisu part of this recipe - call it poetic food license).

To make the chocolate sauce; gently melt the chocolate with unsalted butter and 4 tablespoons of water. Stir well until the sauce becomes shiny and cool a little. Pour sauce over the Cremet.
